You do not want Google caching the defaced page. Use your .htaccess file to redirect all traffic to a 503 Service Unavailable page. Alternatively, contact your hosting provider to temporarily suspend the site.
Once cleaned, go to Google Search Console. Use the "Removals" tool to request that Google delete the defaced cached page from search results. Otherwise, when people search "hacked by mr green," your site will appear.
